27 Oct Greek Brown Rice Salad Recipe
Step 1:
Use your rice cooker (I’m a huge fan of the Zojirushi) to cook up 4 cups of brown rice. I use 2 cups in this recipe and the rest can be reserved for other meals. Affiliate Disclosure
Step 2:
Slice 3⁄4 cup of cherry tomatoes. Chop 2 medium sized bell peppers. Chop 3 small cukes (seeds removed) slice 1⁄2 cup of pitted Kalamata olives.
By the time you finish all of this chopping; you should have about 2+ cups of veggies.
Step 3:
Add the 2+ cups of veggies to the 2 cups of brown rice. Add 1⁄2 to 3⁄4 cup of crumbled feta cheese and drizzle with the vinaigrette of your choice.
Options:
Protein: I usually add about 3⁄4 cup of leftover Costco Rotisserie Chicken to make this a complete meal. To make it a vegetarian options use garbanzo beans instead of chicken-delicious both ways!
Nutritional Information:
1 cup is a serving and it weighs in at about 11 grams of protein and 260 calories/cup.
The protein & calorie content will vary a bit depending on if you swap out the Costco rotisserie chicken with garbanzo beans or if you add more veggies.
