Laugh Your Fat Off

Recently a client said to me, “I used to skip dinner and lose a pound. Now I skip dinner and gain a pound!”
It’s true. As we age, techniques that used to help us lose or maintain weight no longer work.
There reason is, with each passing decade, we lose about 10% of our metabolism. This is due to skipping meals, lack of activity and decreasing muscle mass.

The worst culprit (the one I was guilty of for years) is skipping meals. I’d get up early, drink coffee and not eat until lunch. By that time, my body was starving, so I would overeat. By starving my body, I had triggered the mechanism that caused my body to collect the majority of its calories as fat — just what I was trying to avoid!

Some simple tips to boost your metabolism:

Eat every 3-5 hours. You pack snacks for your kids; why not pack some for yourself? I always have a protein bar, an apple, and an ounce of nuts or seeds in my briefcase. Studies show that people who eat 3-4 times a day are the leanest.

Drink more water. Your body needs water to work effectively, this includes your metabolism.

Laugh daily. Research shows that you burn 10-40 extra calories with every big laugh. This may not seem like much, but it all adds up!

Get your B vitamins. These vitamins are key to having a fully functioning metabolism. Low levels can leave you feeling tired and depressed and will slow down your metabolism.

My favorite sources of B vitamins: spinach, asparagus, bean/lentils, poultry and eggs.

Here’s a great recipe to boost your metabolism.

Fast Fritatta

Ingredients:

  • 4 tablespoons olive oil
  • 1 pound spinach washed and drained with stems removed
  • 2 cloves garlic, minced or mashed
  • 1 pound asparagus cut into 1-inch pieces
  • 8 eggs, beaten
  • 3 tablespoons whipping cream or water
  • 1/4 teaspoon salt
  • Pepper to taste
  • 2 tablespoons Parmesan shredded

Directions

In a sauté pan heat 1 tablespoon oil. Add spinach and garlic and sauté until spinach is wilted and much of its liquid has evaporated. In a saucepan bring salted water to a boil. Blanch asparagus and refresh in ice water. Drain and pat dry.

In a large bowl beat eggs, cream or water ( best choice for low fat), salt and pepper. In a large sauté pan heat

3 tablespoons oil. Add half of beaten, seasoned eggs. As they begin to set around the edges, add spinach and asparagus and start gently lifting egg mixture from sides of pan and push to center, allowing uncooked mixture to touch pan surface. Add remaining beaten eggs. Continue gently moving the egg mixture to center so it becomes self-leveling.  As the frittata loses its runniness, place a large plate over the skillet and quickly invert the entire frittata. Slide it back into the pan so the uncooked side is on the bottom and continue to cook until done. When you insert a wooden toothpick and it comes out clean, it’s done!

Next day leftovers? Eat with a salad for a high protein lunch or a mid-morning energy snack.

Are Summer Salads Worth the Calories?

I like a crisp and crunchy salad on a hot summer day. But I love salad dressing. Honestly, sometimes I think I eat veggies just so I can eat the salad dressing. The average woman gets about 70% of her daily fat calories from eating too much salad dressing, so I guess I’m in good company.

 A salad is intended to take the edge off your hunger while filling your body with vitamins, antioxidants and fiber. But are salads really worth the hidden calories and fat? The key question is what salad are you choosing?

 Research shows us that women who started lunch with a “low calorie” salad consumed 12% fewer calories during their meal. Eating 12% less at a meal is the equivalent of about 100 calories. This choice will help you lose a pound this month.

Women who ate a “high calorie” salad (Caesar or blue cheese wedge) increased the total calorie intake of their meal by 17%. Eating 17% more calories is about 170 extra calories per day. This choice will help you gain a pound of fat every 20 days!

 Summer salads are definitely worth it if you choose wisely. Here are some key points to include when making or ordering a salad:

 Greens are gold: The darker they are, the higher the nutritional content. Choose spinach over iceberg lettuce.

 Cruciferous is king: Add some broccoli, kale or cabbage for an anti-cancer boost.

Vary your veggies: Branch out beyond tomatoes this summer. Try fresh chopped herbs (I use cilantro and basil), arugula, asparagus or peppers.

Easy Open Face Tacos  
 Ingredients:
  • 1 pound of Organic beef
  • 1 can of refried beans
  • 1 can of black beans, rinsed to remove excess sodium
  • ½ container of salsa
  • Beef broth
  • 1 lime
  • Green salad
  • Cheese, grated
  • popchips: salt & pepper or original flavor work well here

 *recipe 4 servings.

Directions:

Sauté beef in one tablespoon of olive oil for 5 minutes. Add the can of refried beans and the strained black beans. Simmer for 3-4 minutes. Add one cup of beef broth and ½ small container of salsa and let simmer for 3-5 minutes. Add the juice of one lime to the mixture. Get a plate and cover it with popchips. Put the taco mixture onto the chips and then add green salad, salsa, and grated cheese.

Healthy and Fast Creamy Salsa Dressing:

Take 1 Tbs. of Greek yogurt and add 2 Tbs. of your favorite salsa to a container with a tight fitting lid. Shake until mixed, about 5-10 seconds. Serves 1-2 people.

Leftover Meal Options:

  1. Breakfast/lunch burrito can be made with the leftover taco mixture and scrambled eggs placed in a warm tortilla.
  2. Turn into a taco salad at work the next day. Bring the salad and chips separately, put together with the leftover taco meat. Add salsa as your dressing and some sliced avocado. This is an excellent high protein and high energy afternoon meal.

  2. Laugh daily. Research shows that you burn 10-40 extra calories with every laughing session. This may not seem like much, but it all adds up!
  3. Get your B vitamins. These vitamins are key to having a fully functioning metabolism. Low levels of Vit B can leave you feeling tired and depressed; and it will slow down your metabolism.

Today’s tip: Always carry your water bottle and stay hydrated (your urine should be clear or almost clear). Rent some funny movies this weekend. To get vitamin B eat more spinach, asparagus, bean/lentils, poultry and eggs.
